Eating a keto diet has been the best thing I could do for myself as far as health, weight, and let me tell you, digestion. I suffered from major stomach issues and acid reflux. In my past, I ate whatever was easiest to make, which varied from mac and cheese to pizza. Health was not a priority. I was one of those people who would say it’s too expensive to eat healthy.. The truth is, this is a cop out.
Before Keto
I was eating an unintentional diet; it consisted of whatever was convenient, and I’m still for convenience, but all for intentional now. My gut was usually in pain and gassy, which was not only embarrassing but also uncomfortable, and worst of all, I could not lose weight on a standard American diet.
Since Keto
When I started a keto diet by cutting out basic starches like bread, pasta, rice, chips, and crackers I felt the immediate positive difference. As I cut out gluten, I realized I had been gluten intolerant because my digestion was like night and day. I also cured my acid reflux by staying steady on a healthy keto diet. In addition, a very wonderful perk of eating keto is that when done right, the pounds melt off. I lost 30 pounds sticking to a keto diet. A dirty keto diet does not help the same as a healthy one. I have accepted that eating an intentional healthy diet takes work, but I am worth it. My kids love it too!
Planning Your Keto Meals
Coming up with keto meal ideas doesn’t have to be stressful—once you get the hang of how keto works, it becomes all about mixing and matching your favorite low-carb ingredients. Here’s a super simple framework to help you spark endless keto-friendly meal ideas:
First: Know Your Keto Basics
Keto is high-fat, moderate-protein, and low-carb.
So when you’re thinking of meal ideas, focus on:
- Protein (chicken, beef, eggs, turkey, salmon, shrimp, pork)
- Healthy fats (avocado, cheese, nuts, olive oil, butter, cream)
- Low-carb veggies (zucchini, spinach, broccoli, cauliflower, mushrooms, peppers)
Second: Build Your Meal Like This:
Protein + Low-Carb Veggie + Fat Source = Keto Magic
Examples:
- Grilled chicken + roasted broccoli + garlic butter sauce
- Scrambled eggs + spinach + cheddar cheese
- Ground beef + cauliflower rice + avocado slices
